چکیده

Starch properties and structure of a wheat mutant (WRS-1) high in resistant starch (RS) was compared to that of the wild type (Sumai No.6). In cooked hot flour and retrograded flour, the amounts of RS in mutant WRS-1 were 7.8 and 9.4 times of wild type (0.5 in hot flour and 0.6 in retrograded flour), respectively, and correspondingly the slower and incomplete starch hydrolysis was also in both types of samples. WRS-1 had a higher max of absorbance, blue value (BV), apparent amylose content (AAC), and contained the increased intermediate and long chains with 18 degree of polymerization (DP) and decreased short chains with DP 17. Two types of starch granules, large A in lenticular shape and small B in spherical shape, were observed in both mutant and wild types. However, the starch granules in WRS-1 were relatively larger and some were irregularly-shaped. High content of total starch (TS), decreased contents of lipid (LC) and protein (PC), lower onset temperature (To), peak temperature (Tp), final temperature (Tc), and the enthalpy of gelatinization ( Hgel) were observed in WRS-1.

The Rheological Behavior of Wheat Starch Particulates Filled Uncured Styrene-Butadiene Rubber

This study treats one important aspect of starch-filled rubber compounds which is their rheological behavior. Starch-based SBR1712 masterbatches resulting from various formulations were prepared using a mini two roll mill and an internal mixer (Plastograph Brabender). The content in starch was varied from 0 to 50 phr. The effect of starch content on the rheological behavior was ev...

Registration of Common Wheat Germplasm with Mutations in SBEII Genes Conferring Increased Grain Amylose and Resistant Starch Content

Starch present in the endosperm of common wheat (Triticum aestivum L.) grains is an important source of carbohydrates worldwide. Starches with a greater proportion of amylose have increased levels of resistant starch, a dietary fiber that can provide human health benefits. Induced mutations in STARCH BRANCHING ENZYME II (SBEII) genes in wheat are associated with increased amylose and resistant ...

In vitro Starch Hydrolysis Rate, Physico-chemical Properties and Sensory Evaluation of Butter Cake Prepared Using Resistant Starch Type III Substituted for Wheat Flour.

Resistant starch type III (RS III) derived from enzymatically debranched high amylose rice starch was prepared and used to make butter cake at different levels (0, 5, 10, 15 and 20%) in place of wheat flour. Physico-chemical properties, sensory evaluation, and in vitro starch hydrolysis rate of the developed butter cake were investigated. This study showed that the content of resistant starch i...

Effects of heat-moisture treatment on physicochemical properties of wheat starch

Abstract Heat-moisture treatment is a physical method for starch modification to improve its functional properties depending on the application. The functional characteristics of the heat-moisture treated starch depend upon the source of starch and treatment conditions including time and temperature. The main objective of this study was to determine the functional properties of heat-moisture tr...

تولید نشاسته ژلاتینه گندم و ذرت به وسیله خشک کن غلتکی واستفاده از آن در تولید سس سالاد

Salad dressing is a semisolid emulsion and a colloidal system with high consumer demand. Food polysaccharides (e.g starch) are used in the formulation of salad dressing to improve its physical properties and sensory attributes. In this research, 10% mixture of wheat or maize starches were used to produce pregelatinized starches by a double drum drier, followed by milling and sieving. The pregel...
